May 24, 2026 | Moussaka is a dish enjoyed throughout the eastern Mediterranean. It has taken on so many different forms and styles as it has moved from region to region, but it is always made with eggplant [aubergine].
In the Levant, we have our own version, which also has its own regional touch. Today, I'm sharing the Palestinian version, or at least the version that was made in my home. It's completely vegetarian, served usually at room temp or cold. It’s another very simple dish to prepare. If you don't like eggplant, this one is a great way to re-introduce it. April 26, 2026 | This is a dish enjoyed in most of the Arab countries. Originating in Egypt, we in the Levant have adopted this dish and never looked back. It's essentially a lasagna made with penne pasta and a red meat sauce seasoned with our very favorite Arabic 7 spice. It's beautiful, it's to die for, and best of all, it's a crowd pleaser. Hummus is arguably one of the most iconic dishes to come out of the Levant. It’s creamy, it’s got a touch of lemon and garlic, it’s filling, and it’s just one of several mezze dishes we have.
In Arabic, hummus just means chickpeas. So sometimes when we say hummus we’re talking about the dip I’m sharing today and sometimes we’re talking about the chickpea itself - it really just depends on the context.
I’m a traditionalist. I love to learn the true recipes as they were intended to be made before I start playing around with new flavors, or ideas. It’s the best way to establish a strong foundation.
Overall, hummus is a very easy dish to make but one note is that technique and patience matter. If you try to rush this, you won’t get the result you’re looking for. So, take your time, be patient, and I promise you’ll make an incredible batch of hummus every single time.

In standard Arabic, the recipe is called Djaj w batata (دجاج وبطاطا).
The name given to the dish above is how it is written and said in dialect, omitting the ‘d’. In other words, it is a shortened form of the Arabic word for chicken. Hence it is written as shown in the title above.
Mar 11, 2026 | Kufta B'Siniyeh literally translates to "kufta in a tray." Siniyeh is the Arabic word for tray, and the "B" is short hand for "bil" which means "in". So literally ‘kufta in a tray’.
This is what a majority of people like me grew up with. Some sort of oven-baked kufta with potatoes, tomatoes, and. Sometimes, onions. It's the most basic way you can prepare kufta. So, for that reason, I think it's also a very, very easy way to step into the world of our cuisine.
It's really quite simple to do, so I hope you will give it a try.

April 19, 2026 | Sabanikh is the Arabic word for spinach, and that's exactly what this dish is: lots and lots of spinach cooked down with plenty of onion, garlic, ground beef, and a nice touch of lemon juice to bring this all together.
It's a beautiful and simple dish that really defines a Levantine home. Of course, our Lebanese, Syrian, and Jordanian neighbors also share this dish but with their own touch.
I highly recommend this one. I actually make this for myself quite often because it's easy and it’s a healthy option to throw together.

May 10, 2026 | In the Levant, we stuff pretty much any and all vegetables and to start this stuffed vegetable series off, we'll be stuffing tomatoes. (Yes, I know, they really are fruits, but we eat them like vegetables, so today, I’m classing it as a vegetable!)
We're starting with this because I consider tomatoes to be very easy to stuff and they cook in the oven so it's pretty hands off. It's a great way to step into more complex Levantine recipes without being all too intimidating. I really hope you can give this one a try.

Nb: This name is a name given to this dish in the Levant. There, it is sometimes also sometimes called (محشي بندورة), which is a reversal of the words. In the Gulf and in Egypt, the dish is called (طماطم محشوة), or (طماطم محشوة).
