In standard Arabic, the recipe is called Djaj w batata (دجاج وبطاطا). The name given to the dish above is how it is written and said in dialect, omitting the ‘d’. In other words, it is a shortened form of the Arabic word for chicken. Hence it is written as shown in the title above.
