Waleed Asadi: The Levantine Shepherd's Pie | Saneyet Batata w Lahme | صينية بطاطا باللحم

May 31, 2026 | Meat and potatoes is a combination that every culture utilizes in multiple ways. Sometimes roasted, fried, stewed, and in this case, baked.

When I think of a western shepherd’s pie it's filled with butter, peas, carrots, and is a bit like stew. The Levantine version, on the other hand, is very simple and light and has all the extra bits served on the side. It really is just meat and potatoes.

This is the version I grew up with. It's a very nostalgic dish for me. It feels like home, tastes like home, and I hope it's something you can bring into your home.

May 24, 2026 | Moussaka is a dish enjoyed throughout the eastern Mediterranean. It has taken on so many different forms and styles as it has moved from region to region, but it is always made with eggplant [aubergine].

In the Levant, we have our own version, which also has its own regional touch. Today, I'm sharing the Palestinian version, or at least the version that was made in my home. It's completely vegetarian, served usually at room temp or cold. It’s another very simple dish to prepare. If you don't like eggplant, this one is a great way to re-introduce it. I hope you’ll love it.

April 26, 2026 | This is a dish enjoyed in most of the Arab countries. Originating in Egypt, we in the Levant have adopted this dish and never looked back. It's essentially a lasagna made with penne pasta and a red meat sauce seasoned with our very favorite Arabic 7 spice. It's beautiful, it's to die for, and best of all, it's a crowd pleaser. If you love pasta but want to switch things up, macarona bechamel is your move!

Traditional Palestinian Hummus | حمص فلسطيني تقليدي

Hummus is arguably one of the most iconic dishes to come out of the Levant. It’s creamy, it’s got a touch of lemon and garlic, it’s filling, and it’s just one of several mezze dishes we have.

In Arabic, hummus just means chickpeas. So sometimes when we say hummus we’re talking about the dip I’m sharing today and sometimes we’re talking about the chickpea itself - it really just depends on the context.

I’m a traditionalist. I love to learn the true recipes as they were intended to be made before I start playing around with new flavors, or ideas. It’s the best way to establish a strong foundation.

Overall, hummus is a very easy dish to make but one note is that technique and patience matter. If you try to rush this, you won’t get the result you’re looking for. So, take your time, be patient, and I promise you’ll make an incredible batch of hummus every single time.

In standard Arabic, the recipe is called Djaj w batata (دجاج وبطاطا). The name given to the dish above is how it is written and said in dialect, omitting the ‘d’. In other words, it is a shortened form of the Arabic word for chicken. Hence it is written as shown in the title above.

Waleed Asadi: Levantine Tray-baked Kufta — Kufta B'Siniyeh | كفتة بالصينية

Mar 11, 2026 | Kufta B'Siniyeh literally translates to "kufta in a tray." Siniyeh is the Arabic word for tray, and the "B" is short hand for "bil" which means "in". So literally ‘kufta in a tray’.

This is what a majority of people like me grew up with. Some sort of oven-baked kufta with potatoes, tomatoes, and. Sometimes, onions. It's the most basic way you can prepare kufta. So, for that reason, I think it's also a very, very easy way to step into the world of our cuisine.

It's really quite simple to do, so I hope you will give it a try.
