Nov 8, 2024 | Dul Avrat Çorbası, "Widow's Soup," is a comforting and humble soup from Adana, Turkey made with staple ingredients.

Legend has it that this soup was first created by a widowed woman who, despite her limited resources, became famous for making delicious, filling meals from basic, inexpensive ingredients like lentils, chickpeas, and homemade noodles (erişte). The combination of spicy, tangy flavors and hearty staples made this soup a staple in the region.

With green lentils, square noodles and spinach orchard, this soup is packed with nutrients and flavor. A spicy kick from pul biber (Turkish chili flakes) and a tangy finish with fresh lemon or bitter orange (turunç) juice. A traditional Turkish soup, perfect for warming you up on a cold winter day!

Dana Kavurma is one of the quintessential Turkish dishes, particularly cherished during Kurban Bayrami (Eid al-Adha). This dish can be best described as braised beef or even confit, as the beef is slowly cooked in its own fat and juices. This age-old and traditional cooking method not only enhances the flavor but also serves as a means to preserve the meat throughout the winter. Alongside its counterpart, lamb kavurma, it remains a beloved classic for every Turkish household.

One of the best accompaniments for Dana Kavurma is the rice pilaf. Today, we are preparing a simple yet aromatic browned butter rice pilaf, which pairs beautifully with the rich flavors of the beef. Additionally, a Shepherd's salad—true to its name—is a basic yet refreshing salad made with chopped vegetables and a hint of acidity, providing a delightful balance to the hearty dish.

Hungry Man Kitchen: How Authentic ADANA KEBAB Is Made - Turkey's Most Famous Kebab

Mar 25, 2024 | Adana Kebab is a unique and possibly the most famous kebab originating from one of the most famous kebab cities in the country, Adana. Authentic Adana kebab is made with ground lamb and tail fat that are hand minced together with just salt, paprika / hot red pepper flakes and sometimes with fresh red paprika pepper giving it an intense lamb flavor.

Unlike many recipes on the Internet and YouTube, the authentic Adana kebab recipe does not contain any onion, garlic or any other ingredients and thus retains the unique and pure lamb flavor.

It is traditionally served on a platter over flatbreads, charred peppers and tomatoes, or wrapped into lavash bread along with a simple and traditional onion salad.

Apr 29, 2022 | Musakka is an eggplant-based (sometimes potato-based) dish, often containing ground lamb or beef and is common in the Middle East, Balkans and, of course, Turkey, with many local and regional variations.

While many versions, especially the Greek one, Moussaka, has a top layer made of béchamel sauce, Turkish musakka consists of sliced and fried eggplant served in a tomato-based meat sauce, warm or at room temperature. This dish is a classic in traditional Turkish cuisine and pair with it rice and yogurt (or better cacık). That's an addictive combination.
