Middle Eats: Shish Taouk: Chicken Kebabs | شيش طاووق

May 25, 2023 | It's grilling season, so I wanted some chicken kebabs, and that meant I had to make the best ones - Shish taouk. These marinated chicken cubes, are juicy, flavourful, and so delicious. It barely requires any work to put together, and yet makes one of the best grilled foods you'll ever try.

May 4, 2023 | We're celebrating 20 years of Ottolenghi and so we're focusing each week on a key Ottolenghi ingredient that we use, love and want you to try. This episode is all about Preserved Lemons!

One of the Ottolenghi flavour bombs, we use preserved lemons to flavour meats and vegetables, sauces and marinades. The process is quite simple but requires a little planning (about 4 weeks to be exact), though preserved lemons are available to buy too.

Watch Yotam making preserved lemons, his preserved lemon roasted chicken as well as how to spatchcock a chicken - a great technique to reduce roasting time and a more even cooking.

Our Yemeni Kitchen | مطبخنا اليمني | Arabian Chicken & Rice Upside-down Recipe: Maklouba / Maqluba | مقلوبة

Ingredients:

Cooking oil
Onion (120g)
Bay leaves
Cinnamon stick
Cardamom, cloves, and one tsp of coriander seeds
1 whole chicken, cut up
1 tbsp of salt, half a tsp of black pepper, and one fourth [a quarter] of a tsp of turmeric
Potatoes (650g)
Eggplant [aubergine] (650g)
Onions (250g)
For the rice:
One and half tsps of salt
Three cups of washed and soaked basmati rice
Half a tsp each of black pepper, cinnamon, cardamom, cloves, and turmeric
For the garnish:
Coriander and fried onions

Method:

In a pot add a little cooking oil
Sauté chopped onions (120g)
Then add the following ingredients:
Bay leaves, cinnamon stick, cardamom, cloves, and one tsp of coriander seeds
Add one whole chicken cut up with the skin removed
Add the following ground spices:
1 tbsp of salt, half a tsp of black pepper, and one fourth [a quarter] of a tsp of turmeric
Then, cover the chicken with hot water
Cook on high heat for 20 minutes
While the chicken is cooking, prepare the vegetables:
Fry the cut potatoes (650g)
Fry the cut eggplant (650g)
Fry the onions (250g)
After 20 mins, remove the chicken and strain the broth
Place a piece of parchment paper on the bottom of a non-stick pot
Add the following ingredients, in order:
Place the chicken in the pot first, then the fried potatoes, then the fried eggplant, then the fried onion
In a separate bowl, add three cups of washed and soaked basmati rice (soaked for 20 minutes)
Add one and half tsp of salt, half a tsp each of black pepper, cinnamon, cardamom, cloves, and turmeric
Mix everything and place the mixture in the pot on top of the other ingredients.
Add the strained chicken broth
Cook on high heat until the amount of water decreases. Then, on low heat for 30 minutes
Carefully flip it into a serving tray and let it stand for 5 minutes before removing the pot
Carefully remove the pot
Garnish with coriander and fried onions

Aug 24, 2022 Cooking chicken with eggplant [aubergine] in this easy way makes it very tasty. Everyone loved it.


Ingredients and step-by-step instructions:

Start by searing the chicken in vegetable oil.
Then add the following ingredients:

150g onion
Salt to taste
1 tbsp each of cumin, paprika, and coriander
1 tsp each of black pepper, chili pepper, and turmeric
Bay leaves

Method:

Pour enough hot water over the chicken to cover it. Cover the pot and let it cook over high heat for 30 minutes.
Fry three eggplant (500g) in hot vegetable oil.
Fry the potatoes (500g) in the same cooking oil.
Place tomato slices on the bottom of a deep oven-safe pan.
Remove the chicken from the heat and add it to the pan.
Stack the eggplant, bell peppers, and potatoes, and place them around the chicken.
Mix the following ingredients in a bowl with three cups of the chicken broth: 50g tomato paste; 1 tsp each of salt, cumin, paprika, coriander, and half a tsp of black pepper.
Place in a pre-heated oven at a temperature of 400°F, 200°C.
Bake the chicken with the vegetables for 30 minutes.

French Cooking Academy with Stephane : Humble but Tasty Sautéed Chicken in Tomato Sauce

Poulet à la tomate


Ingredients for 4 people:

4 to 6 pieces chicken (thighs and breast)
2 tbsp flour to coat the chicken
2 tbsp olive oil
20 g butter
1 bay leaf
1 sprig of thyme
1 large onion
3 garlic cloves
50 ml white wine or red wine if you prefer
100 to 150 ml white chicken stock
1 can chopped tomatoes
salt and pepper to season
chopped parsley plus a few slices of lemon to
decoration for the grilled tomatoes (only do this if you have ripe tomatoes that are in season)
salt and pepper
a drizzle of olive oil on each half tomato
1 tsp. dry oregano
1 tsp. per half tomato
1 pinch of chopped parsley per half tomato

’Hunter’s Chicken’ Recipe – ‘Chicken Chasseur’ – By the French Cooking Academy

A chicken chasseur recipe. Chicken chasseur is a classic French stew made with sauteed pieces of chicken, served with a sauce made using a combination of brown chicken stock, tomato sauce, mushrooms, shallots and fresh herbs (tarragon and parsley). It is best made using a cast-iron ‘Dutch oven’(US), or cast-iron casserole (UK). It goes well with a side dish of potatoes or quality tagliatelle. It is best eaten with a dry white wine such as Muscadet.

Saudis Protest After Chicken Prices Soar

THE INDEPENDENT: A social media campaign is encouraging shoppers in Saudi Arabia to stop buying chicken in protest at price hikes of up to 40 per cent.

The Twitter movement – entitled "Let it Rot" – asks Saudi citizens to punish traders for raising the price of chicken in recent weeks.

The Saudi Agriculture Minister, Dr Fahad Balghunaim, blamed the price rise on a production shortfall. He said suppliers could only meet about 45 per cent of demand due to a rise in the cost of animal feed. » | Andrew Liddle | Saturday, October 06, 2012

Chicken Injected with Beef Waste Sold in UK

THE INDEPENDENT: Muslims and Jews conned into eating meat bulked out with cow and pig products

Cafes and restaurants across Britain have been selling chicken secretly injected with beef and pork waste, The Independent can reveal today.

In a hi-tech fraud run by firms in three EU states, food manufacturers are making bulking agents out of porcine and bovine gristle and bones that help inflate chicken breasts, so that they fetch a higher price.

The swindle was only detected by the Food Standards Agency (FSA) using new scientific techniques because the non-chicken material had been so highly processed it passed standard DNA tests.

Thousands of restaurateurs and cafe owners are likely to have been conned into buying chicken containing the powder – which binds water into chicken breasts – while diners have been unwittingly consuming traces of other animals when eating out.

Britain's two million Muslims, Jews and Hindus are forbidden from eating either pork or beef. Muslims would ordinarily eat halal chicken and Jews kosher chicken sold through approved caterers and butchers. >>> By Martin Hickman, Consumer Affairs Correspondent | Thursday, June 04, 2009
