This recipe is similar to moussaka or karnıyarık, but it has a unique twist: instead of being stuffed, the spicy ground meat mixture is layered on top of individual slices of tender, roasted eggplant, hence the name "oturtma" (placed).

Hungry Man Kitchen: Turkish Stuffed Eggplants - How to Make Karniyarik

Feb 7, 2021 | Today's dish is Karniyarik which means "split belly" in Turkish and as you may guess, these fried eggplants are cut and stuffed with a ragout like, rich ground beef mixture with spicy, aromatic onions, chilies and tomatoes. Finished in the oven with a tomato chili sauce, this dish is one of the favorites of many Turkish people and is usually served with (pilav) Turkish rice and cacik (yogurt with garlic, herbs and cucumber).

İmam bayıldı (translates to "the Imam is fainted or delighted) is an Ottoman dish made with whole roasted eggplants stuffed with onion, garlic and tomatoes and simmered in olive oil. It is an olive oil-based dish and is very popular in Turkey. This vegan dish is usually served cold at room temperature or also can be enjoyed warm.
