From texture to the interplay between sweet and savory, together with the use of spices and other ingredients, rice pudding remains a key player in both Italian pastry and cuisine to this day. Walter Musco, a pastry chef known for his technical skill and elegance, opens the doors of his Roman workshop to present three versions: the classic recipe, a plant-based (and savory) risolatte, and a high-end pastry creation designed to repurpose leftover rice pudding into a refined cake.
